::SMS:: Sweet Potato Bread

Hi, there! I'm baaaack! Last weekend I was in beautiful Puerto Rico for a destination wedding. It was so nice to getaway for the weekend with the hubs (without the baby). It was the perfect weekend.

Here's a photo of the wedding cake & cupcakes:

After a two week hiatus, it's time I got back to baking again. Today's SMS recipe was chosen by our founder, Lorelei of Mermaid Sweets, which is where you can find the recipe. I dont know why it's called sweet potato BREAD when it's made in a bundt pan. Shouldn't this be called Sweet Potato Cake?

I made a few adjustments:
- instead of canned sweet potatoes, I roasted 3 fresh ones,
- subbed in 1 cup of whole wheat flour,
- instead of oil, I used apple sauce, and
- used walnuts instead of pecans cause that's what I had.


The result? A super moist and delicious CAKE! This was so easy to put together. I loved it! It didnt even need the glaze (which i totally forgot about!)

Your cake looks great. I liked this recipe too..it was easy to make and yummy! I made three little mini loafs, it was perfect!

I know I thought the same thing about the bundt pan. I don't own a large one so I made it in loaf and mini bundts.

I love your substitutions. Great idea! I thought of whole wheat flour, too but didn't do it. Wish i had!

Welcome back, Karen. That is a gorgeous picture of the beach, and the wedding cake looks very cute!!

Your bread/cake (I agree with you; it should be called a cake) looks great. I will be making this in a little bit and will be skipping the glaze too (no time).

It sounds like you had a wonderful trip. Your bread looks delicious! I had to skip this one (didn't have sweet potatoes but did have a cold) but it sure sounds good.

So funny you mentioned it, I kept writing "cake" instead of bread in my post and had to go back and change them all. Your bundt looks great! I agree - the glaze was definitely not necessary.

I too used applesauce for part of my oil when I realized I had run out of oil. It seems to work pretty well for sweet breads and muffins.

Your bundt looks great! I agree definitely more of a cake than a bread :-)

Welcome back!! Looks like a wonderful location for a weekend and to get married. FUN! And your bread looks great. I'm glad it worked out with the applesauce. I thought about subbing that in, but got scared at the last minute and didn't LOL!! I will next time.

3 sweet potatoes seems like a lot... how many lbs do you think you used? maybe mine are just HUGE! lol
