{MSC} Gingerbread Cupcakes


Kayte from Grandma's Kitchen Table chose this month's MSCupcake -- gingerbread cupcakes -- which was an easy recipe to put together. I cut the recipe in half and came out with 8. The one thing I didnt like about the recipe was all the butter in it, even at half recipe, 1.5 sticks was used. I should have went with my gut and just used 1 stick of butter because out of the oven, these were oily. The taste was sort of there but they were too dense.... not fluffy at all.

I didnt even bother with the cookies cutouts that were supposed to go on top. Instead of vanilla frosting, I used some cream cheese frosting that I had. Sorry to say but this was a disappointing recipe from Martha. I hope the other MSC Bakers had better luck than me.

i luv the cupcake papers...they can really make a muffin/cupcake look something special. ;) also, i kinda felt the same about the flatness of these. they were good. but nothing great (as i blogged about in mine). i think the addition of baking powder/soda/salt would help...alot!

Totally with you on the butter...and the 4 eggs! But they were damn good. I had way better luck then you, they were a hit. Although I do find all of her recipes are a hit and miss. Good luck next time.

Yes, this was definitely a recipe that improved the more you played around with. I'm sure it could be done with less butter.
Your cupcake looks great!

It's so strange to me how everyone seems to have a different experience with the same recipe. I didn't find mine oily at all... but I do love butter, so maybe I just didn't notice. Maybe next time you could try subbing in some applesauce... would probably add great flavor too. :) And definitely be careful not to overmix... sometimes that can make baked goods less fluffy -- but I'm really not sure what could have gone wrong. Hopefully you'll enjoy the next cupcake more!

My cupcakes turned out oily, too. Overall, I've been a little shocked that there is so much butter in almost EVERY recipe in that book. I thought they tasted good, though!

Karen, good, I wasn't the only one who felt this way about this below-average cupcake recipe.

Like 4 eggs? No baking soda? Really, Martha? It tasted like a muffin with no pow flavor. I wasted good butter on this! :(

Cream cheese frosting would have been a better choice with these cupcakes. I wasn't too impressed by the recipe, but yours look terrific. I agree with you about the butter. The white fluffy frosting also called for over one stick of butter. So rich!

Seems the results on this recipe were quite mixed! Mine came out of the oven pretty greasy too, and though I didn't try them, my mom said they were good. Hopefully next month will be more successful all around :)

I am sorry to hear that they didn't work out for you...sometimes I get recipes like that as well and it is always disappointing b/c I always WANT them to turn out. They look nice and the wrappers are really pretty. I hope you like the coconut ones next month! They sound good to me.

This was definitely a mixed results cupcake for everyone it looks like. I found mine tasted pretty good the first day only (the raspberry topping helped a lot) but the next day they'd lost their edge.

No matter how they tasted, you definitely win with the presentation. They look really pretty.
