Oatmeal Toffee Cookies

Morsels of goodness
  • 1 cup of butter
  • 2 eggs
  • 2 cups packed light brown sugar
  • 2 teaspoons vanilla extract
  • 1 3/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3 cups quick oats
  • 1 3/4 cups Heath Toffee bits
Prehat oven 375 F. Lightly grease cookie sheet. Beat butter, eggs, brown sugar and vanilla until well blended. Add in flour, baking soda, cinnamon and salt. Then stir in oats & toffee. Drop dough by rounded teaspoon about 2 inches apart onto cookie sheet. Bake 8-10 minutes.

Makes about 3-4 dozen cookies, depending on size.
